What is the programming language most suitable for developing a transparent HTTP proxy server?

Hi. I'm a senior in highschool and I have the chance to get extra credit by writing a proxy server. I did a little research, but I'm still undecided about the language. I will develop the proxy on a the Ubuntu-Server OS and I'm familiar with C/C++ and networking on UNIX systems, but I consider using a high-level interpreted language instead (since it won't have more than one client (me) performance is negligible, but I think a high-level language would decrease complexity). Unfortunately, I have almost no experience with high-level language (except Scheme and C/C++ (if you want to count that as "high-level")), but I'm willing to learn. So I'm asking you (someone out there, who might have more experience): What language do you think is most appropriate for my problem? Thank you for your time and answers.
